Donna Fratto's Biscotti Recipe

4 Cups flour
4 Beaten eggs
1 Cup oil
1 ½ Cups sugar
4 Tbsp baking powder
3 Tsp vanilla extract or anise flavor
1 Cup chopped walnuts

  1. Mix sugar and oil. Add beaten eggs and vanilla. Gradually add flour and baking soda. Fold in chopped walnuts. Spoon mixture by tablespoon onto lightly greased cookie sheet forming a long strip about 2 inches wide and 1 inch thick.
  2. Place each strip about 2 inches apart, because mixture will spread during baking.
  3. Bake at 350 degrees in preheated oven about 15-20 minutes or until bottoms are slightly brown. Allow cooling only 1 minute. With spatula, carefully lift one strip at a time onto cutting board. With sharp serrated knife, slice each strip into 1 inch thick Biscotti. As you slice, place sliced portions on the baking sheet, side down. Return full tray to oven and bake about 10-15 minutes longer to toast lightly. After toasting, place on cooling rack to cool. Store in a large canister.
