Chicken Mole Soup

½ cup onion, finely chopped
3 cloves garlic, minced
1 tbsp olive oil
6 peeled & chopped plum tomatoes
5 tbsp chopped green chilies
3 lbs chicken cut into small pieces
6 cups chicken broth
1 cup crushed tomatoes
2 oz unsweetened chocolate
1 tsp each cinnamon & cumin
pinch of salt & pepper
½ cup flour

  1. In a large soup pot, sauté onion and garlic in olive oil. Add plum tomatoes and chilies to pot. Stir in chicken, cook until tender.
  2. Add to pot 4 cups chicken broth and crushed tomatoes, turn heat to low. In a separate pot heat 1 cup of broth add chocolate and spices. Stir until completely dissolved, add to soup.
  3. Bake flour in 350 oven for 5 minutes to slightly brown.
  4. Whisk together flour and remaining cup of broth.
  5. Cook and stir until thickened, add to soup.
  6. Stirring, cook 15 minutes more over med-high heat. Serves 8
