Cherry Mascarpone Stuffed Fresh Strawberries
1 Quart fresh strawberries
1 8oz carton mascarpone cheese
¼ cup dried tart cherries finely chopped
1 tsp almond extract
3 tbsp confectionary sugar
1 tsp milk
Fresh strawberry halves
Sliced almonds for garnish
Shredded coconut
- In a medium bowl combine mascarpone cheese, cherries, almond extract, sugar, and milk and mix until smooth. Spoon mixture in a pastry bag fitted with a ½ inch wide-open star tip. Pipe onto strawberry halves. Place on serving platter or for a beautiful presentation, arrange strawberry halves on a bed of coconut on a serving platter. Garnish with sliced almonds.
