Chocolate Dipped Stuffed Dates
1 lb pitted dates
1 teaspoon vanilla extract
1/3 cup red wine or Grand Marnier
½ cup toasted whole almonds
1» lb semi- sweet chocolate
- Soak dates in sufficient hot water and vanilla extract to cover for 30 minutes. Drain and pat dry.
- Soak dates in red wine 1 hour. Drain if necessary.
- Stuff each date with an almond.
- Melt chocolate.
- Dip each date in chocolate to coat completely.
- Arrange on wax paper.
- Refrigerate until chocolate is set and ready to serve.
